I found the cheapest USB gamepad I could and soldered wires to the test points on the pcb and super glued them place so not to break the solder joints, the analog sticks were replaced by a simple resister voltage divider.
The only problem I had was the cheap pcb would lift the traces super easily.
Slagcoin has a great page on how to do this http://www.slagcoin.com/joystick/pcb_wiring.html
The wires were then crimped to 2.8mm spade connectors which slide onto the buttons.

OK They were from Hong Kong and not overnight but my arcade stick and buttons are here.
6 Sanwa OBSF-30 buttons, 2 standard buttons for start and select and 1 Sanwa JLF stick

Now I just have to find some quick connects that fit and build a box.
